- 150g (5 oz) feta cheese, crumbled
- 100g (4 oz) Kalamata olives, pitted and sliced
- 1 dessertspoon dried oregano
- freshly ground black pepper to taste

- Preheat the barbecue for medium high heat.
- In a large bowl, combine turkey, feta cheese, olives, oregano and pepper. Mix together, and form into patties.
- Lightly oil the cooking grate or rack. Place patties on the barbecue. Cook for 10 to 12 minutes, turning halfway through.

This recipe is amazing! I've never used turkey mince before & wasn't sure what to make with it, then I found this recipe! My husband hates olives so instead I used half a diced red onion. The burgers were really moist, without adding any stock like other tweaks, and were very morish! I made quite thick burgers & got 7 in total, and served with a salad - no bread used lettuce leaves instead. Although still not enough we're both still hungry!-07 Jun 2009
Used different ingredients.At first I was hesitant about this recipe because I thought the burgers would be a bit too dry. I ended up using minced turkey breast meat and added about 4 tablespoons of chicken stock to the mixture of meat, feta and olives before I formed the patties. Prepare barbecue (medium-high heat). Brush grill rack with oil.
Gently mix turkey, onion, 1/3 cup feta, 3 tablespoons chopped olives, 1 1/2 teaspoons olive oil, garlic, rosemary, generous 1/2 teaspoon coarse salt, and generous 1/2 teaspoon pepper in medium bowl. Form into 4 patties, each about 1 inch thick. Brush with oil and sprinkle with salt and pepper.
Grill burgers until charred on both sides and cooked through, about 5 minutes per side. Grill cut side of rolls until toasted, about 2 minutes. Assemble burgers with Tomato Jam and additional feta and chopped olives.

What you’ll need to make these Moroccan-spiced turkey burgers
Along with ground turkey (or chicken), you’ll just need your blend of spices to make the burgers, plus my incredible feta sauce and any toppings your heart desires. Here’s everything to stock up on:
- Ground turkey: I like to use a 93% lean ground turkey or chicken so that it still has a bit of fat content to stay nice and juicy.
- Veggies: you’ll also mix some finely diced red onion and cilantro into the burgers for extra flavor.
- Honey: a little sweetness pairs beautifully with all of the sweetness in the turkey burgers.
- Spices: you’ll need ground cumin, cinnamon, turmeric, garlic powder, cayenne pepper, salt and pepper.
- Sauce: trust me when I say the creamy feta sauce drizzled on top of one of these burgers is UNREAL.
- Toppings: I like serving these turkey burgers on a multigrain bun with butterhead lettuce and some sliced red onion, but up to you!

Ground turkey and mushrooms sounded like a great combo to me. I decided to kick my turkey mushroom burger up a notch with sun-dried tomatoes, olives and feta cheese.
My burger turned out moist and juicy. No need for added sauce, mayo or ketchup. A toasted ciabatta bun, tender baby lettuce and sliced green onion made this a perfect lunch.
Chop the garlic until very fine, like grains of sand. Add the butter and olive oil to a large pot, and melt over medium heat. Add the chopped garlic and sauté until the garlic is lightly browned.
Chop the spinach into 1-inch pieces. Add the spinach, salt, and pepper to the pot. Mix and cook until the spinach leaves are wilted and dark green in color.
Sprinkle in the feta cheese and mix well. Add the ground turkey and mix until all the ingredients are thoroughly combined.
Divide the meat into quarters and form into ½ -inch-thick patties. Cook the patties over medium-high heat in a frying pan. Flip the patties every 2-3 minutes. You will know they are done when the juices run clear and the meat is light brown all through the center. Use a knife to cut into the centers to make sure the meat is cooked. Serve on buns.

1 1/4 Lbs Ground Turkey (85/15)
1 Cup Shallots, chopped
4 Cloves Garlic, minced
4 Oz Feta Cheese, crumbled
1 Jalapeno Pepper, chopped
1 Tsp Smoked Paprika
1/4 Tsp Cayenne Pepper (optional)
2 Tbsp Parsley, chopped
1 Tbsp Olive Oil
Zest from 1/2 Lemon
Salt & Black Pepper to taste
1. In a skillet, heat oil to medium-high heat. Sauté shallots for until fragrant and a bit golden. Add garlic and cook for about 1 minute. Remove shallots and garlic from the skillet. Set aside to cool.
2. In a bowl add turkey, feta cheese, smoked paprika, jalapenos, parsley, egg, cooked shallots, lemon zest, garlic, salt and black pepper. Mix until well-combined.
3. Form mixture into 5 patties.
4. Heat skillet to medium-high. Add oil to the pan.. Cook patties until golden on each side and cooked through about 5 minutes on each side.

My husband and I both love turkey burgers, so when I came across this recipe I knew I had to try making it. It actually turned out better than I imagined it would! The secret is in the black olives they help the turkey meat hold in moisture. The feta adds a creamy touch that truly brings these burgers to perfection. My husband agrees, so that’s two votes yes on these burgers!
Spiced Turkey Burgers with Green Olives and Feta
These are by far the most flavorful turkey burgers I’ve ever tasted. The mixture of warm roasted spices, fresh herbs, feta, and olives set these so far apart from the average grilled meat patty that I almost hesitate to call them burgers. I didn’t even bother with a bun – the crisp cool lettuce wrap served as a perfect balance to the warm spiced turkey burger.
I first made these burgers a couple years ago after reading about them on Kalyn’s Kitchen. My cousin Corinne was visiting and we grilled the burgers and ate them stuffed into pita. I followed Kalyn’s variation on the original Fine Cooking recipe but added a twist of my own by adding crumbled feta into the turkey mixture. They were so delicious that Corinne still talks about them to this day.
When I noticed a package of ground turkey in the fridge, I decided it was time to revisit these delicious burgers. This time, I made a few more changes. The original recipe calls for fresh mint and parsley, but when I looked in the fridge, the only herbs I had on hand were dill and cilantro. It seemed like a perfectly good substitution to me.
Next, I started looking through my enormous collection of spices and realized I could use some of my favorite McCormick Gourmet Roasted spices. If you haven’t yet tried the Roasted Cumin and Roasted Coriander, you’re in for a treat.
I also figured I couldn’t go wrong adding a handful of chopped olives along with the feta this time around.
Now that I’m done fiddling with the recipe, it’s time to start making the burgers. The first step is to make a garlic-salt paste. It might seem fussy to ask you to do this, but it’s really simple to do and I really think that it helps to spread garlic flavor evenly throughout the burger. I find myself using this paste a lot in my cooking, so I’m hoping you’ll find it to be a useful tip.
I like to start by smashing the peeled cloves against the cutting board with the side of my chef’s knife. Then I sprinkle kosher salt over the garlic and mince it all together with the knife.
Next, use the side of the knife to smash and smear the mixture together against the board. Do this a couple of times, mince it some more, then repeat the smearing motion.
You should noticed that it starts to form a uniform paste. Just keep mashing, smearing, and chopping until the pieces of garlic are no longer visible and it’s turned into a paste.
You’ll end up with something like this. Hint: a little bit of this garlic paste is great for whisking into salad dressings.
Now measure out all of your ingredients: chopped herbs, chopped olives, crumbled feta, olive oil, and garlic paste.
Break the ground turkey into big chunks in a large mixing bowl.
Sprinkle all of the ingredients evenly over the meat and mix gently with your (clean) hands.
You want everything to be evenly distributed throughout the meat, but try not to over mix.
Divide the turkey mixture into six equal pieces and form them into patties. Arrange the burgers on a sheet pan or platter and put it in the refrigerator while you prepare your grill. This can be done a few hours in advance.
Grill the patties, covered, over direct medium heat for about 4 – 6 minutes per side or until just cooked through.
I serve mine with homemade tzatziki. This batch was made with FAGE Total Greek Yogurt and it was delicious! Here’s the recipe.
As I mentioned earlier, I chose to eat the burgers in a lettuce wrap this time and I thought it was a great choice, but these burgers are also delicious wrapped in pita. You could always go the traditional bun route as well.

Spiced Turkey Burgers with Green Olives and Feta
adapted from Fine Cooking and Kalyn’s Kitchen
2 medium cloves garlic
1 1/2 teaspoon kosher salt
1 1/2 lb. ground turkey
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh dill
2 tablespoons olive oil
2 teaspoons sweet paprika
1 1/2 teaspoons ground cumin
1/2 teaspoons ground coriander
1/4 teaspoons cayenne
1/3 cup crumbled feta (about 2 ounces)
1/3 cup chopped green olives
Tzatziki, homemade or store-bought
Make a paste with the garlic and kosher salt: On a cutting board, sprinkle smashed and peeled garlic cloves with the salt. Mince the garlic and salt together then smear and mash to a paste using the flat side of a chef’s knife. Alternatively, you can mash the garlic and salt to a paste using a mortar and pestle. If neither of those methods work for you, just press or chop the garlic finely and stir together with the salt.
Gently break the ground turkey into pieces in a large bowl then mix the garlic paste, cilantro, dill, olive oil, paprika, cumin, coriander, cayenne, feta, and olives into the ground turkey (it’s easiest to use your hands for this). Shape the meat into 6 equal 1-inch-thick patties. Refrigerate, uncovered, for at least 20 minutes and up to 4 hours.
While the burgers are chilling, prepare a charcoal or gas grill. Grill the burgers, covered with vents open, over direct medium heat until nicely marked and just cooked through (an instant-read thermometer inserted in a burger should read 165°F), about 4 to 6 minutes per side.
Top burgers with Tzatziki and serve wrapped in lettuce or your favorite flatbread.
