- 800 g white flour
- 1 lgt salt
- 20 g of fresh yeast
- 1 lgt sugar
- 30 ml olive oil
- 50 g butter
- about 400-450 ml of water
- 250 g feta cheese
- 2-3 lg yogurt
- 1 small egg
- 3-4 green onion threads
- 1 egg for greased
Method of preparation
You can prepare the dough in the mixer or, if you don't have it, you can knead it by hand.
In a bowl of the mixer put the sifted flour and add salt.
Heat 150 ml of water and mix with 1 lgt of sugar, 2 lg of flour and fresh yeast. It is left to activate. Heat the rest of the water slightly. Pour the mayonnaise and start the mixer at low speed. Gradually pour warm water, alternating with oil. When all the ingredients have been incorporated, increase the speed for 5 minutes. At the end, add the butter at room temperature and leave for another 2 minutes. The dough should be soft, non-sticky and fine. Leave in a warm, covered place until it doubles in volume.
The feta cheese is put on the grater with large holes, the yogurt and the egg are added and it is homogenized. Cut the green onion into rounds and incorporate it into the cream cheese.
The dough is divided into 3 equal parts. Spread each part in a rectangular sheet, on the floured table, with a thickness of about 0.5 cm. Spread some of the cream cheese on the sheet and then roll as tightly as possible. It is placed in a round tray lined with baking paper, giving it the shape of a snail. Do the same with the rest of the dough, placing it in the tray following the other pie, thus forming the snail.
Beat the egg well and grease the pie on top.
Put the tray in the preheated oven at 180 degrees until it browns nicely on top.

How to cook burek (recipe). Turkish Burek with cheese, meat, chicken
Today we will learn how to prepare Turkish burgers. You will find the recipe with meat or mincemeat in this article. We will also provide detailed instructions for preparing other types of sponges. Variations of this Turkish pastries were not counted. It doesn't even always look like a pie made from a stuffed snake sausage paste. There is also a cigarette-burek. This Turkish dish is often compared to Italian lasagna. The most difficult problem in making a burek (it is more correct to call it a pie) is a dough. It's called "yufka." For some types of beads, "filo" dough is used. Because they are all very hardworking, Turkish housewives do not worry too much and buy a pie base in stores. But sometimes they also make dough for themselves. We will tell you how to make yufku. And for lazy people we will open the secret: the dough can be replaced with a thin baking sheet. But it is only suitable for some types of borek. For other varieties, you can use a ready-made pastry.
Let's start, of course, with the base, the test, which forms the belly button. Recipe offers traditional Turkish cooking yufku two cups of flour, a hundred milliliters of water, two eggs, salt and a small amount of oil (can be spread), which must be pre-melted. You must be patient. I saturated the flour in a deep bowl, making a depression on top of the slide. We drive in eggs, pour in water, salt. Add half a tablespoon of butter. Knead the dough well, sprinkle with flour and let it sit for a quarter of an hour. Then rotate it in a layer two inches thick. Lubricate with 3 tablespoons of oil. We cut the layer into three parts, add them to each other and roll them again. Once again, grease 3 tablespoons of oil. Again cut into three parts, which we place one on top of the other. We sit for a few minutes and form tennis ball-sized colobs. Rotate each very thinly to create a circle with a diameter of sixty centimeters. Now you need to let the soup dry a little.
There is a kind of dish that is very similar to lasagna. It's called a "water well." The recipe also offers Turkish dough for the lasagna principle. To do this, in 640 grams of sewn flour, add four eggs and half a cup of salt water. Knead a smooth, elastic dough, pouring vegetable oil. We divide them into several parts. One of them should be bigger than the rest. Let the dough rest for half an hour under a towel. All parts are laminated in very thin layers. The largest I put in a form, lubricated with vegetable oil. The edges of the dough should extend considerably over the edges of this tray or baking trays. In a saucepan, boil salted water and boil each layer for one minute. We'll talk on a towel. Due to the cooking process, such a dish, regardless of its filling, is called a water pillar.
For example, let's make the simplest filling. Four hundred grams of Turkish feta cheese are mixed with a bunch of chopped parsley. If the cottage cheese is very dry, you can add some natural yogurt. Now we form our burek with cheese and greens. The recipe prescribes to grease a large sheet of dough (which is not boiled and is already baked in a baking dish) with vegetable oil. On it we spread half of the smaller layers. Also make on each oil. I put half the filling. We get up, sprinkle with oil. I placed the rest of the boiled dough on top. They all move the filling and grease with oil. We choose the sloping edges of the large bottom layer, throwing them up. Lubricate the product with egg yolk with vegetable oil. Bake until golden brown with moderate heat.
Burek cigar (Turkish dish): step by step recipe
His name is bound to form. This is not a pie, but flat cakes, wrapped in the shape of a Cuban cigar. They are served as a beer snack in Turkish bars. The classic filling for "cigars" is dill cheese. This Burek recipe offers Turkish cuisine extract filo test. But we will replace it with ready-made Armenian lava. Filling cooking. Brynza or 450 grams of salted cheese must with fork. Add three egg yolks, a bouquet of dill visited, a denticle or two detailed garlic. Push whites. Lavash is cut into squares of about 10 centimeters. For each piece with the edge, put a tablespoon of filling. We stop the cigar. The outside of the square is moistened with whipped proteins so that the dough does not rotate. Heat the vegetable oil in a pan and fry the cigars until they rise. Spread on napkins to make a bottle of oil.

Telemea pies and homemade sheets -Preparation method
Telemea cheese filling for the pie!
While the dough is resting, prepare the cheese filling.
Because it is not an extremely salty filling, I chose to sweeten the filling but you can also prepare a salty filling in which dill and green onion tails can be added. The pieces of cheese are removed from the brine, passed through the apple grater and mixed with the sugar to taste and the egg yolks.
If the filling is too soft you can add a tablespoon of fine semolina to the composition.
How to make pie sheets in the house!
The sifted flour is placed in a large bowl. Add salt and vinegar then warm water little by little, kneading until incorporated.
Continue kneading until the dough is elastic and no longer sticks to your hands.
Divide into four equal pieces, flatten and grease abundantly with soft butter mixed with oil.
Place the pieces on a plate on top of each other, cover with plastic wrap and leave for 30 minutes at room temperature.
On the table is placed a white cloth or a white tablecloth that we use exclusively to spread the pie sheets.
The piece of dough is spread lightly in the hand then it is placed on the tablecloth and it is spread in a thin sheet as in the pictures.
If the edges are a little thicker, cut them with a knife or a pizza cutter.
Telemea pies and homemade sheets
Grease the pie sheet with melted butter or oil, spread the cheese filling in half of the sheet in a layer as uniform as possible, fold the edge a little over the cheese, then lift the edge of the tablecloths so that the pie rolls itself.
Roll into a snail shape and place in a tray lined with baking paper.
If you do not want to make individual pies you can choose to place it in a round tray as in the picture or in a regular rectangular tray.
Grease the top with egg yolk, sprinkle with caster sugar and bake in the preheated oven at 200 degrees C for 30 minutes or until the pie is browned.
They can be eaten both hot and cold, they are very tasty and tender !!
Obesity promotes cancer
A series of recent studies have shown a direct link between obesity and certain types of cancer: colon, esophagus, breast, ovary, endometrium and pancreas, nutritionist Lygia Alexandrescu saying that the link between increased body weight and the appearance of neoplastic cells is very complex.
A recent study, which lasted 16 years and included over 900,000 participants, found that obese subjects have a higher risk of being diagnosed and dying from a certain type of cancer compared to normal-weight subjects. This study concluded that obesity is the cause of mortality in 20% of women suffering from cancer and 14% of men with cancer.
According to nutritionist Lygia Alexandrescu, being overweight can affect the functioning of the immune system and lead to inflammatory syndrome (associated with an increased risk of cancer) the level of certain hormones, such as insulin, androgen hormones and estrogen, factors that regulate cell growth, such as IGF-1 excessive leptin secretion and uncontrolled cell proliferation.
& # 8222When you start gaining weight is important, so overweight teenagers have a higher risk of developing ovarian cancer before menopause compared to normal weight women. Also, due to the presence of excess adipose tissue, overweight women have high estrogen levels and thus an increased risk of developing estrogen-dependent breast tumors & # 8221, the nutritionist told AGERPRES.
According to her, in the case of men, it was observed that a high body mass index is associated with an increased risk of colorectal cancer.
Lygia Alexandrescu claimed that the distribution of adipose tissue is an important factor and it was observed that abdominal fat deposits are strongly related to the risk of colorectal cancer.
& # 8222 Intentional weight loss with the help of balanced diet therapy, with a diet rich in dietary fiber, enzymes, antioxidants from raw local fruits and vegetables, high quality protein (fish, turkey, egg) and monounsaturated vegetable fats (provided by nuts , almonds, avocado, organic cocoa), as well as through a correct and complete hydration leads to a drastic decrease in the risk of cancer & # 8221, the nutritionist also showed.

Rejuvenation treatment with bone juice
One of the reasons we have health problems is that we no longer cook food from the bones and cartilage of animals, but only from meat.
Over time, the bones have always been a place of honor in the diet of people who knew that the health of their joints depended on gelatin. (resulting from collagen), located in the ligaments, tendons and extremities of animal bones. Consuming bone juice, our ancestors fed all the areas that needed collagen and no longer limped. Once in the body, the substances, from the juice of the bones, knew exactly where to go and what to fix.
Collagen is not only used on the joints and bones, but also on the hair, skin, arteries and other parts of the body, which means that bone juice is the equivalent of a rejuvenating treatment. Also calcium, magnesium, potassium and other valuable minerals from bones, cartilage, bone marrow and the vegetables that join them, will be easily recognized and assimilated by our body. People who do sports or work hard will easily replace electrolytes lost through perspiration, consuming bone juice. Those with lactose intolerance can consume bone juice for calcium and especially fish head juice which is also an important source of iodine for the thyroid gland. Gelatin also makes cooked food much easier to assimilate. Gelatin is extremely effective in treating digestive problems, hyperacidity, colitis, inflammation of the colon.
In the past, chicken bone juice was used as a remedy for colds and asthma. Bone juice is also useful in preventing many infections, as well as in relieving their symptoms. Chicken bone juice contains a substance that helps repair the small intestine (which is closely related to the nervous system). Thus chicken bone juice heals the nerves, improves digestion, reduces allergies, relaxes and revitalizes. Children will enjoy healthy bones and joints, good digestion and will be more protected from colds and infections if they are frequently given bone juice. For 2000 years gelatin was used in China and Japan to stop bleeding and in 1759 an anonymous author from Nuremberg wrote that gelatin was used in cases of dysentery and to invigorate the sick. Chicken or pork chills have always been very popular in traditional Romanian cuisine.
