Bean stew with sausages

The beans are kept in cold water from evening to morning. It is boiled and after a few boils, the water is changed, which we also replace with hot water. 1 whole potato is boiled together with the beans (to absorb the substances that cause abdominal discomfort) which are then discarded.

Chop the onion and pepper, grate the carrot through the small grater and put it in oil for about 10 minutes, then add 1 cup of water, cover with a lid and let it simmer. If necessary, add hot water. When they have softened, add the tomato paste and cook together for 5 minutes, then add the beans, a little water in which the beans and the fried / fried sausages were boiled. After about 10, remove from the stove and add the chopped parsley.



The basket of beans and sausages is a special dish. The beans are cleaned of impurities and left to soak in water for a few hours.
After increasing its volume, it is washed well and the impurities are removed.

Put the beans to boil for 30 minutes, then change the water in which they boil, repeat the procedure after another 30 minutes.
After the beans have softened, drain the water in which the beans were boiled, stopping only 2-3 tablespoons of juice.
In a saucepan, fry the finely chopped onion, the grated carrot and the julienned bell pepper in oil.
After hardening the vegetables, add the boiled beans and the stopped juice, the broth, thyme, tarragon, peppercorns and ground pepper, bay leaves, salt to taste.

The cabanos are cut into thicker slices, fried and added to the beans. Boil everything for 10 minutes.

While the beans were boiling, I cut round shapes out of the dough and baked them on the back of some bowls, taking the shape of baskets.
